Ahhh! The all American Hamburger. Most fast food joints, sit down restaurants, picnic or home dinner tables will have hamburgers on the menu. From pan fried to barbequed, these popular sandwiches are a favorite. Most commonly served with pickles & french fries. However, potatoe salad, deviled eggs, onion rings potatoe chips and garden salads make great side dishes also.

BAKED BEANS
1 lg can baked beans
1/2 c ketchup
1 t Kitchen Bouquet
1/8 c molasses
1 small onion
1/2 pkg onion soup mix
Preheat oven to 350 degrees. Mix all ingredients well and pour into baking pan. Bake in 350 degree oven for 1 hour. Salt and pepper to taste. Serve Hot.

Oreo Cookie Cake
Simply put... Heavenly! This simple and scrumptious cake is fun to share. Can you say CHOCOLATE HEAVEN? I have changed the recipe a bit and I used regular chocolate frosting instead of this glaze. This and more recipes available at Kraft Recipes
1 pkg. (2-layer size) devil's food cake mix
4 squares BAKER'S Semi-Sweet Chocolate
1/4 c butter
1 pkg. (8 oz.)Cream Cheese, softened
1/2 c powdered sugar
2 c thawed COOL WHIP Whipped Topping
12 OREO Cookies, coarsely crushed
Heat oven to 350F. Prepare cake batter and bake in 2 (9-inch) round pans as directed on package. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely. Microwave chocolate and butter in small microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min. Meanwhile, beat cream cheese and sugar in large bowl with mixer until blended. Gently stir in COOL WHIP and crushed cookies. Place 1 cake layer on plate, spread with cream cheese mixture. Top with remaining cake layer. Spread top with chocolate glaze; let stand 10 min. or until firm. Keep refrigerated.
Sweets
Pineapple Crunch
1 c. crushed pineapple (drained)
1 c. tidbit pineapple (drained)
1/2 c. melted butter
3/4 c. sugar
1 1/2 c. finely grated cheddar cheese
2 tbl. flour

Topping
1/4 c. melted butter
1 1/2 c. crushed Ritz Crakers
Mix all ingredients together well. Pour into buttered 8" x 8" baking dish. Mix topping ingredients and sprinkle over pineapple mixture. Bake in 350 degree oven for 50 minutes. Serve warm.

Cake...
1 box white cake mix
1 c unflavored carbonated water
1/3 c vegetable oil
1/4/ c rum or 1 t rum extract plus 1/4 c water
3 tbl chopped fresh mint leaves
2 t grated lime peel
3 egg whites

Glaze...
1/2 c butter
1/4 c water
1 c granulated sugar
1/2 c rum or 2 t rum extract plus 1/2 c water

Garnish...
1 c whipping cream
3 tbl powdered sugar
shredded lime peel
Heat oven to 350 degrees. Spray bottom of 13 x 9 baking pan with baking spray. In large mixing bowl, beat all cake ingredients on low for 30 seconds. Then beat on medium for 2 minutes. Pour into baking pan. Bake 25 to 30 minutes or until toothpick inserted in center of cake, comes out clean. Cool 15 minutes. Poke holes into entire cake with toothpick every inch. In saucepan, mix glaze ingredients. Heat to boil on high heat, stir frequently. Reduce heat to medium heat and boil for 3 minutes. Stir frequently until glaze slightly thickens. Pour glaze over entire cake. Cool completely. In small mixing bowl, beat whipping cream and powdered sugar on high speed till peaks form. Spread onto cake and garnish with grated lime peel.

Menu's

Progressive Dinner Party

This dinner idea makes for a very fun evening. It's works best with at least three family's, whom all live fairly close. Great for neighborhoods. Each course will be prepared & served at each family's home.
~Choose a home to begin, and serve appetizers. Shrimp Cocktail works well. You may also choose to have salad and bread here.
~The second home will serve the main course. I suggest a meat dish, (Spinach Steak works well and can be prepared in advance.) with rice or baked potato and a vegetable. Have this menu prepared & ready to heat & eat.
~The third home will serve desserts. Choose a dessert that best compliments your choice of menu. If a hearty, filling main course is served, try a minty dessert. I will settle a full tummy.
~If a fourth home is interested, you might have them throw out a deck of cards or a game for entertainment. Either serve nuts or munchies. Or a late night snack such as mini pizzas.
~You may want to go with a theme party. These can be costume, sports, holiday or 20's, 50's, 70's etc. Be creative.

Hammy Sammys

Quick little snack for anytime. Open and spread out 2 tubes of crescent roll dough onto cookie sheet. Press evenly to form crust. Break sliced american or swiss cheese, into 1" squares. Place 1" apart across and 1" down the crust. Cut ham slices into 1" sqares and lay atop the cheese. Spoon a 1/8 teaspoon of sweet relish on the ham and cover with 2 more already opened and spread out crescent roll dough. Crimp edges together and with knife cut between the piles to separate each Hammy Sammy. Bake at 375 for 13-18 minutes, until the crust is lightly browned. Cool, cut and break apart sections. Great appetizer for a brunch or anytime snack. Enjoy!

New Recipe

Sliders

These are deliciously fun and always a hit. Simply take 1 lb. ground beef and add 1 package dry ranch dressing mix. Mix well. Form hamburger patties but make them small (about 4") and thin. Place in hot skillet and sprinkle garlic atop, flipping once. In separate skillet, brown thinly slided onions with a dab of butter. Place patties and onions on mini slider buns. You can grill buns or simply cover for a moment once together to steam the buns. Add cheese if you wish on top of pattie after flipping. Pile them on a platter and watch how fast they disappear.

Snacks

Texas Caviar

15 oz can pinto beans
15 oz can black eyed peas
15 oz can whole kernal white corn
1 small green pepper
1 c red onion
2 stalks celery
1 t salt
1 t pepper
1/2 c apple cidar vinegar
1/2 c vegatable oil
1/2 c sugar

Boil sugar, oil and vinegar until dissolved, set in fridge to cool. Finely chop green pepper, onions and celery. Place into mixing bowl and add pinto beans, black eyed peas and corn. Mix well and add vinegar mixture. Mix well and serve with favorite nacho chips. *I like to add chopped red pepper to this recipe also. *You may also add chopped cilantro.

Kid Stuff
Mini Pizzas
Yummy, quick treats for all to enjoy..!

1 tube flaky bisquits
pizza sauce
grated mozzarella cheese
sliced large pepperoni

Open can of bisquits and separate. Pull each flaky bisquit in half to make 2 mini crusts. Lay flat on lightly greased cookie sheet. Spread 1 tbl. pizza sauce on each crust. Pinch fair amount of cheese, sprinkle over sauce. Lay 1 large round pepperoni on top. Bake in 350 degree oven for 10 minutes or until crusts are lightly browned. These mini pizzas are fun for kids to make. However, they go quickly at adult parties too. Other toppings such as green pepper, onion, ham, pineapple, bacon, black olives or Italian sausage are equally as yummy.

Cakes
Prism Cake
5 boxes Jello
(1 strawberry-1 lime-1 orange-2 lemon)
1 c pineapple juice
1/2 sugar
1 box Graham Cracker crust mix
2 pkgs. Dream Whip

Mix each, red, green, orange and 1 lemon jello separately with 1 1/2 c boiling water until dissolved. Pour into separate bread pans (about 1 inch deep) and set in fridge until firm. In mixing bowl mix 2nd box of lemon jello with pineapple juice & sugar. Heat until dissolved. Set in fridge till syrupy. Line 13 x 9 baking dish with Graham Cracker Crust (follow directions on box). In separate mixing bowl beat 2 pkgs Dream Whip (follow directions on box). Fold in Pineapple juice mixture. Mix well. Cut with knife each jello color into 1/2 " squares. Gently remove all the colors of Jello from pans and fold them into mixture. Mix well and pour onto crust. I also have used pre-made graham cracker crusts. This recipe will fill 2 round pre-mades. Let set in fridge till firm. Cut into squares.

    MEXICAN LASAGNA

    1 lb. hamburger
    1/2 c onion (chopped)
    1 can refried beans
    1 8oz. can tomatoe sauce
    1 4oz. can green chilies
    1 pkg. taco seasoning
    6 flour tortillas
    2 c. shredded cheddar cheese
    shredded lettuce
    sour cream
    salsa/hot sauce
    chives
    jalapeno peppers
    Preheat oven to 350 degrees. Brown hamburger meat and drain. Return to pan and simmer with onions. Add refried beans, tomatoe sauce, green chilies and taco sauce. Stir and simmer until blended well. Spread thin layer of mixture evenly in bottom of baking dish. Add a layer of tortillas and spread enough mixture to cover tortillas. Cover with cheese and continue this pattern, finishing with cheese. Bake 30 minutes. Let cool a few minutes and slice into portions. Place on plate on shredded lettuce. Garnish with a dabble of sour cream and drizzle with favorite salsa and/or hot sauce. Sprinkle with chopped chives and jalapenos.

    Tasty Treats
    Jalapeno Popper Dip
    3 oz. jalapeno peppers diced
    1 4 oz. can green chili peppers
    1 c mayonnaise
    1 c parmesan cheese
    2 8 oz. bars cream cheese
    2 loaves small french bagettes sliced


    Cream mayonnaise and cream cheese together well. Add diced jalapenos, green chilis and parmesan cheese. Mix well. Spread into a baking dish and bake at 350 degrees for 20 minutes or until lightly golden brown. Spread onto sliced french bagettes.

    Stuffed Celery
    1 bunch of celery stalks
    1 8 oz package cream cheese
    3/4 c. very finely chopped walnuts
    Wash and cut celery at desired length, pat dry. Cream 8 oz package cream cheese. Mix with finely chopped walnuts. Mix well. Fill celery and arrange on platter.
    **Also in this picture are Beefy Rolled Green Onions.

    Caramel Corn
    8 quarts popped popcorn
    2 c. brown sugar
    2 sticks butter
    1/2 c. white corn syrup
    1 t. salt
    1 t. vanilla
    1/2 t. baking soda
    3 c. peanuts
    Put popped popcorn and peanuts in large mixing bowl. Set aside. In saucepan, combine brown sugar, butter, corn syrup, salt and vanilla. Bring the syrup to a boil for 5 minutes-watch close! Remove pot from burner and add baking soda. It will become foamy. Quickly pour over the popcorn and peanuts. Stir until popcorn is covered well. Pour onto large cookie sheet. Spread out and bake in 250 degrees oven for 1 hour. Stir every 15 minutes, until cool. Store in airtight container.

    "What's For Dinner?" I can help with ideas for that daily question asked in homes nearly everywhere. Let's get started. How about Crunchy Herb Chicken, with Cabbage Salad, Roasted Redskins and Green Beans. Serve a yummy Banana Cake for dessert.

    Tip:

    While cooking with these recipes, please keep in mind, most of them are spiced to my liking. Feel free to add more or go lighter on the spices. When I try new recipes, I might omit something I do not care for or add extra amounts if I favor that particular ingredient. However, be careful with baking ingredients, such as those like flour, baking soda, baking powder, eggs and so on. The result in a cake rising properly may be disappointing. With that said, have fun and enjoy!

    Rice Crispy treats

    Arrange *fondue pot in center of table. Each guest should have fondue forks and a plate. As with any fondue, please supervise when serving to avoid burns or fire. Melt chocolate chips first , in double boiler or in sauce pan on low heat. Watch closely as not to burn chocolate. Transfer into fondue pot. Keep sterno on low to med heat so chocolate does not burn. Prepare dippers. Slice bananas into bite size pieces. Wash fruit. Cut up angel food cake & Rice Crispy treats into bite size pieces. Set dippers in dishes near fondue pot. Dip and let cool a bit before eating. Be creative, you can dip anything that can be skewed into the chocolate.

    *A small crock pot works well as a fondue pot.

     

     

    Pizza is the by far, one of the ultimate choices in my food vocabulary. I've never said "no" to a pizza. From thick crust to thin crust, homeade, carry out and even frozen pizza my taste buds water for pizza. Here you find some of my favorite homeade pizza recipes.

     

    Feature Salad
    1 3 oz. pkg. Lime Jello
    1/2 c. chopped walnuts
    1/2 c. grated carrots
    1/2 c. diced red apples (with skin)
    1/2 c. diced celery
    Prepare Jello as directed on box. Chill until thickened (about 1 1/2 hours). Add remaining ingredients and stir well. Place into fridge until Jello has set.
    Enjoy!

     

    Feature Recipe

    1/3 c flour
    1/4 t basil
    1/2 t thyme
    1/2 t rosemary (ground)
    1/8 t pepper
    1/4 c butter (melted)
    1/3 c milk
    3 lb chicken (skinned & de-boned)
    5 c corn flakes (crushed)

    Pre-heat oven to 375 degrees. In mixing bowl, combine flour, basil, thyme, rosemary & pepper. Mix well. Add butter & milk. Mix well. Cut chicken into strips. Dip chicken into flour mixture. Coat well & roll in crushed cereal. Coat evenly. Place in baking dish lightly coated with oil. Bake for 55 minutes or until chicken is no longer pink & coating is golden brown.

    Snacks

    Salsa & Nacho Chips

    4 medium or 3 large ripe tomatoes (chopped)
    2 medium onions (diced)
    1 large green pepper (diced)
    2 to 4 jalapeno peppers (sliced)
    1 - 8 oz. can tomato sauce
    1 heaping t. garlic powder
    1 t. salt
    2 tbl. red wine vinegar
    2 tbl. fresh (not bottled) lemon juice
    1/4 c. fresh cilantro
    >

    Combine all ingredients in a food processor. I use food processor for most of chopping. Hand chop a couple of the tomatoes if you like it chunky. Good right away, even better from next day on. Keeps at least 4 - 5 weeks in fridge (if it lasts that long). Makes approx. 5 cups. ENJOY...! Open a bag of your favorite nacho chips. Place nachos in the oven for a bit to warm them up. Serve with this delicious salsa. Feel free to spice them accordingy to your taste buds. I like it hot!

    Main Dish

    Beef Kabobs

    1 tbl olive oil
    2 tbl ground cumin
    1 t cinnamon
    1/4 c chopped rosemary
    1 tbl chopped garlic
    1 1/2 t salt
    1 t pepper
    2 lb lean beef (cut into 1/2" chunks)
    20 cherry tomatoes
    3 green peppers (cut into wedges)
    3 large onions (cut into wedges)

    Combine oil, cumin, cinnamon, rosemary, garlic, salt and pepper in a large bowl. Add chunks of beef and toss well to coat. Thread chunks onto skewers, alternating with onion, cherry tomatoes and green pepper. Grill over hot fire for 3 min. on each side [for medium-rare], or slightly less done than you prefer as meat will continue to cook for a few minutes after removed from the flame. Also note that the meat rub will burn easily so watch closely.

    Beverages

    Brandy Slush

    4 tea bags
    9 c boiling water
    2 c sugar
    1 12 oz. can lemonade concentrate
    1 12 oz. can orange juice concentrate
    2 c cherry Brandy
    7-up

    Pour 2 c boiling water over tea bags, set aside. Mix remaining 7 c boiling water, with sugar till dissolved. Add lemonade and oj concentrate, tea and brandy. Mix well and freeze. Scoop frozen slush mixture into glasses and top with 7-Up. Serve.
    *Please drink responsibly!

    Main Dish

    Breaded Chicken

    2 lbs. chicken breasts
    4 eggs
    2 c. bread crumbs
    2 tbl. garlic
    2 tbl. oregano
    3 tbl. parsley
    1 t. salt
    1 t. pepper
    olive oil
    sweet & sour sauce
    ranch dressing
    barbecue sauce

    This recipe can be used for snacks or dinner. For dinner use whole breasts (boneless and skinned) or chicken tenderloins. For snacks, slice chicken breasts (boneless and skinned) into strips or bite size pieces. Scramble the eggs in mixing bowl. In separate mixing bowl, combine bread crumbs, garlic, oregano, parsley, salt and pepper, stir. Dip chicken strips into the egg, coat well. Remove and roll strips into bread crumb mixture. When completely covered with crumbs, place into hot skillet with 1/4 inch oil (get oil hot first). Fry over medium heat until lightly browned on each side. When done remove from skillet and place on wire rack to drain excess oil. Serve alone or with sweet & sour, reanch dressing or barbecue sauce, for dipping.

    Breakfast

    Breakfast Pizza

    1-8 ounce tube crescent rolls
    6 eggs (beaten)
    1 lb bacon or sausage
    (cooked, drained and crumbled)
    1 1/2 c shredded cheddar cheese
    1/2 c green pepper
    (finely chopped)
    1/2 c green onion
    (finely chopped)
    1/2 c tomatoe
    (finely chopped)
    1-4 ounce can sliced mushrooms
    (optional)

    Preheat oven to 375 degrees. Unroll dough and press into lightly greased 12" pizza pan forming crust. Scramble eggs and pour evenly over crust. Evenly layer remaining ingredients atop. Bake 15-20 minutes or until golden brown. Absolutely, one of my favorites.

    Cheesy Bean Dip

    1 lg. can re-fried beans
    1 can Rotel Diced Tomatoes
    1 pkg. taco seasoning
    1 3/4 c. grated Mexican cheese
    1 pkg taco seasoning
    1 med onion diced
    1/2 green pepper diced
    1 bag favorites nacho chips

    In mixing bowl, combine re-fried beans, Rotel Tomatoes, taco seasoning, onion, green pepper and 1 c. of the cheese. Mix well. Pour into baking dish and cover with remaining cheese. Bake in 350 degree oven until cheese is melted.
    Serve with tortilla chips for dipping.

    This is a amazing cake for any occasion. A frequently requested cake, from Mom's recipe box. She will swirl warmed Rasberry Jam (seedless) atop the buttercream frosting. It creates a beautiful garnish. Click here for this recipe.

    Stuffed Cherry Tomatoes

    20 cherry tomatoes
    1 lb bacon (cooked & crumbled)
    1/2 c mayonnaise
    1/3 c chopped green onions
    3 tbl grated parmesan cheese
    2 tbl parsley

    Cut thin slice off each tomatoe top. Scoop out pulp & discard. Place tomatoes upsidedown on toweling to drain. In mixing bowl, combine remaining ingredients. Mix well. Spoon mixture into tomatoes. Refridgerate for 2 hours.

    Spinach & Stuffing Balls

    2 pkgs frozen spinach
    2 boxes Stove Top Stuffing
    1 1/2 sticks butter
    1 c parmesan cheese
    6 eggs

    Drain and pat dry spinach. Place in mixing bowl and mix with stuffing, melted butter, grated parmesan cheese and eggs. Mix well and form balls. Place on ungreased cookie sheet and bake for 20 minutes at 350 degrees.
    Easy and Yummy.

    Rolled Green Onions

    12 green onions
    1 pkg cream cheese
    1 pkg thin sliced beef (lunchmeat)


    Wash green onions. Cut away rooted ends and cut green ends (leaving enough green stalky leaves to show out of ends the beef when rolled) so they are all the same length. Lay 1 slice beef on flat surface and dab it dry with paper towel. Lightly & gently spread (room tempurature) cream cheese over entire slice of beef. Lay green onion at one end and roll up entirely. Continue until all green onions are done and serve chilled.

    Asparagus Croissants

    Place uncooked croissant rolls on baking sheet separate & rolled out. Blanch fresh asparagus for 2 minutes. Pat dry. Make one pkg. Hollandaise Sauce and spread thin coat onto each cresant roll. Place one asparagus spear on each wide end of croissant roll and begin to roll until your reach to pointed end. Continue until all rolls are complete. Arrange for baking and glaze with more Hollandaise Sauce. Sprinkle parmesan cheese atop and bake according to directions for the croissant rolls.
