Fall Favorites
Fall brings lots of apples and chilly weather (in my region anyway). I like to warm things up with a pot of hot chili, smoothered in melted cheese and diced onions. For a variation of chili, try my chicken chili. Side with a Hoogiebunz Sandwich. This season brings the Turkey to the table. I suggest a Turkey Pot Pie with the leftovers. Finish it off with this fun treat to make and more fun to eat, Caramel Corn. After the apples have fallen fall from the trees, try an applecrisp for a warm dessert. Enjoy!
Spice Pumpkin Torte

2 c cold milk
2 pkg. JELL-O Pumpkin Spice instant pudding
1/2 t cinnamon
1 8 oz. tub Cool Whip
1 graham cracker pie crust mix
1/2 c chopped pecans
1 tbl honey

In mixing bowl, beat milk, dry pudding mix, and cinnamon until well blended. Spread 1 and 1/2 cups of mixture onto prepared and baked Graham Cracker Crust. Add 1 and 1/2 cups Cool Whip to the remaining pudding mixture and blend well. Gently spread over last layer. Spread remaining Cool Whip atop. Refridgerate 1 hour. In skillet, cook chopped pecans with honey on low heat 3 minutes until caramelized. Stir frequently. Cool on wax paper, and separate. Sprinkle nuts atop pumpkin spice torte.
*Note: This recipe is for one pie. If making in a 13 x 9 baking dish, I double the recipe.

Apple Pie

2 pie crusts
8 peeled & thinly sliced tart apples
1 c sugar
2 tbl flour
1 t cinnamon
1/4 t cloves
1/8 t salt
3 tbl butter

Preheat oven to 400 degrees. Lay 1 pie crust into greased pie pan. In mixing bowl, combine apples , sugar, flour, cinnamon, cloves & salt. Mix well. Pour into unbaked pie crust. Dot with butter. Top with 2nd pie crust. Flute edges, cut slits into top crust. Sprinkle with sugar. Bake for 50-55 minutes or until golden brown. Serve warm or cooled. If desired, top with a scoop of vanilla ice cream.

Turkey Pot Pie

2 pie crusts
1 c chopped turkey breasts(cooked)
1 c diced potatoes (cooked but firm)
1 c sliced carrots (cooked but firm)
1 c peas
1 c corn
2 c turkey gravy

Preheat oven to 350 degrees. Lay 1 unbaked pie crust into greased pie pan. Mix turkey and vegetables in mixing bowl. Spread turkey mixture into pie crust. Cover with 2nd unbaked pie crust and flute edges. Cut design into center of top crust with knife. Bake for 45-60 minutes or until crust is golden brown.

Caramel Corn
8 quarts popped popcorn
2 c. brown sugar
2 sticks butter
1/2 c. white corn syrup
1 t. salt
1 t. vanilla
1/2 t. baking soda
3 c. peanuts
Put popped popcorn and peanuts in large mixing bowl. Set aside. In saucepan, combine brown sugar, butter, corn syrup, salt and vanilla. Bring the syrup to a boil for 5 minutes-watch close! Remove pot from burner and add baking soda. It will become foamy. Quickly pour over the popcorn and peanuts. Stir until popcorn is covered well. Pour onto large cookie sheet. Spread out and bake in 250 degrees oven for 1 hour. Stir every 15 minutes, until cool. Store in airtight container.


Chicken Chili
2 lb cooked & shredded chicken
2 onions diced fine
3 t garlic
3 t cumin seed
1/2 t cilantro
1 t dried hot peppers
2 diced jalapeno peppers (optional)
4 t chili powder
1/8 c brown sugar
1 lg can tomatoe paste
1 lg can diced stewed tomatoes
1 1/2 c water
1/2 t Kitchen Bouquet
2 lg can chili beans
In large pot, mix all ingredients. Mix well and bring to boil. Turn heat to low and simmer for at least an hour. Stir frequently. *For the daring, add a few shakes hot sauce. *For the bold, add 1 t. cayenne pepper. *Optional toppings: grated cheese diced onions.

"What's For Dinner?" I can help with ideas for that daily question asked in homes nearly everywhere. Let's get started. How about Crunchy Herb Chicken, with Cabbage Salad, Roasted Redskins and Green Beans. Serve a yummy Banana Cake for dessert.
Banana Cake

While cooking with these recipes, please keep in mind, most of them are spiced to my liking. Feel free to add more or go lighter on the spices. When I try new recipes, I might omit something I do not care for or add extra amounts if I favor that particular ingredient. However, be careful with baking ingredients, such as those like flour, baking soda, baking powder, eggs and so on. The result in a cake rising properly may be disappointing. With that said, have fun and enjoy!

3 12 oz pkg chocolate chips

Rice Crispy treats

Arrange *fondue pot in center of table. Each guest should have fondue forks and a plate. As with any fondue, please supervise when serving to avoid burns or fire. Melt chocolate chips first , in double boiler or in sauce pan on low heat. Watch closely as not to burn chocolate. Transfer into fondue pot. Keep sterno on low to med heat so chocolate does not burn. Prepare dippers. Slice bananas into bite size pieces. Wash fruit. Cut up angel food cake & Rice Crispy treats into bite size pieces. Set dippers in dishes near fondue pot. Dip and let cool a bit before eating. Be creative, you can dip anything that can be skewed into the chocolate.
*A small crock pot works well as a fondue pot.




Feature Salad
1 3 oz. pkg. Lime Jello
1/2 c. chopped walnuts
1/2 c. grated carrots
1/2 c. diced red apples (with skin)
1/2 c. diced celery
Prepare Jello as directed on box. Chill until thickened (about 1 1/2 hours). Add remaining ingredients and stir well. Place into fridge until Jello has set.


Feature Recipe

1/3 c flour
1/4 t basil
1/2 t thyme
1/2 t rosemary (ground)
1/8 t pepper
1/4 c butter (melted)
1/3 c milk
3 lb chicken (skinned & de-boned)
5 c corn flakes (crushed)

Pre-heat oven to 375 degrees. In mixing bowl, combine flour, basil, thyme, rosemary & pepper. Mix well. Add butter & milk. Mix well. Cut chicken into strips. Dip chicken into flour mixture. Coat well & roll in crushed cereal. Coat evenly. Place in baking dish lightly coated with oil. Bake for 55 minutes or until chicken is no longer pink & coating is golden brown.

Corn Harvest

Southern Cornbread

2 c yellow cornmeal
1 1/2 c flour
2 t salt
2 t baking powder
1 t baking soda
3 eggs, beaten
1 tbl vegetable oil
2 c milk
1/4 c melted butter

Preheat oven to 425. Coat inside of iron skillet with oil and place in oven to preheat. In mixing bowl, combine dry ingredients. In another bowl, whisk together the eggs, milk, and butter. Combine with dry ingredients and stir until moistened. (like a thick pancake batter) Remove skillet from oven and pour in batter, return to oven. Bake 20/25 minutes, until browned. A toothpick inserted in center should come out clean.

Main Dish Recipe

Apple Pork Chops

6 pork chops
1/2 c applesauce
1/4 c olive oil
1/8 c honey
1/2 t thyme
1/2 t rosemary (broken up)
dash salt & pepper

Trim fat off pork chops. Set aside. Mix remaining ingredients and brush a coat on pork chops. Let marianate for 2 hours. Grill chops on heated grill for about 30 minutes, or until browned. Turn frequently and re-brush marianate each time. Cook untill tender. Serve hot.


Tomatoe Harvest

Salsa and Nacho Chips

4 medium tomatoes
2 medium onions (diced)
1 large green pepper (diced)
2 to 4 jalapeno peppers (sliced)
1 - 8 oz. can tomato sauce
1 heaping t. garlic powder
1 t. salt
2 tbl. red wine vinegar
2 tbl. fresh (not bottled) lemon juice
1/4 c. fresh cilantro

Combine all ingredients in a food processor. I use food processor for most of chopping. Hand chop a couple of the tomatoes if you like it chunky. Good right away, even better from next day on. Keeps at least 4 - 5 weeks in fridge (if it lasts that long). Makes approx. 5 cups. ENJOY...! Open a bag of your favorite nacho chips. Place nachos in the oven for a bit to warm them up. Serve with this delicious salsa. Feel free to spice them accordingy to your taste buds. I like it hot!

Hoogiebunz Sandwich
2 lb. lean tender beef
1/4 c. olive oil
1/3 c. teriyaki
1 pkg. onion soup mix
3/4 c. water
1/2 c. shredded mozzarella cheese (per sandwich)
1 lg. onion (sliced thin)
1 pkg. hoogie or sub bunz

In hot skillet, brown beef on all sides, in olive oil. Remove from heat (save drippings in skillet-) and slice thin. Return beef to skillet and add teryaki, onion soup mix and water. Simmer for 1 1/2 hours on very low heat. Lightly spread butter on both sides of bunz and grill until lightly browned. Cover top with mozzarella cheese and mic for 20 seconds to melt cheese. Grill onions with butter until browned. Stack beef on bottom of bun. Cover with grilled onions. Cover with cheesy top bun. Serve with remaining beef broth. Dip each bite into the juice.

2 c applesauce (chunky)
2/3 c brown sugar
1/2 c flour
1/2 c oatmeal
3/4 t cinnamon
3/4 t nutmeg
1/3 c butter
Pour applesauce into bottom of lightly
greased 8 " pan. In mixing bowl, cut butter
into dry ingredients. Leave coarse. Sprinkle
topping over applesauce. Bake in 375 deg.
oven for 15 minutes.
