Pizza is the by far, one of my ultimate choices for dinner (breakfast and lunch too). I've never said "no" to a pizza. From delivery to carry out, thick crust to thin crust, homeade to frozen, my taste buds water for pizza. I like to sprinkle atop my pepperoni pizza, grated parmesan cheese and dried crushed red peppers. Serve this way, with a garden salad.(However, you will never find anchovies on my pizza, but feel free to add them.) Here you find some of my favorite homeade pizza recipes.

Tasty Treat
Caramel Corn
8 quarts popped popcorn
2 c. brown sugar
2 sticks butter
1/2 c. white corn syrup
1 t. salt
1 t. vanilla
1/2 t. baking soda
3 c. peanuts
Put popped popcorn and peanuts in large mixing bowl. Set aside. In saucepan, combine brown sugar, butter, corn syrup, salt and vanilla. Bring the syrup to a boil for 5 minutes-watch close! Remove pot from burner and add baking soda. It will become foamy. Quickly pour over the popcorn and peanuts. Stir until popcorn is covered well. Pour onto large cookie sheet. Spread out and bake in 250 degrees oven for 1 hour. Stir every 15 minutes, until cool. Store in airtight container.

Tip:

While cooking with these recipes, please keep in mind, most of them are spiced to my liking. Feel free to add more or go lighter on the spices. When I try new recipes, I might omit something I do not care for or add extra amounts if I favor that particular ingredient. However, be careful with baking ingredients, such as those like flour, baking soda, baking powder, eggs and so on. The result in a cake rising properly may be disappointing. With that said, have fun and enjoy!

Arrange *fondue pot in center of table. Each guest should have fondue forks and a plate. As with any fondue, please supervise when serving to avoid burns or fire. Melt chocolate chips first , in double boiler or in sauce pan on low heat. Watch closely as not to burn chocolate. Transfer into fondue pot. Keep sterno on low to med heat so chocolate does not burn. Prepare dippers. Slice bananas into bite size pieces. Wash fruit. Cut up angel food cake & Rice Crispy treats into bite size pieces. Set dippers in dishes near fondue pot. Dip and let cool a bit before eating. Be creative, you can dip anything that can be skewed into the chocolate.

*A small crock pot works well as a fondue pot.

 

 

 

Feature Salad
1 3 oz. pkg. Lime Jello
1/2 c. chopped walnuts
1/2 c. grated carrots
1/2 c. diced red apples (with skin)
1/2 c. diced celery
Prepare Jello as directed on box. Chill until thickened (about 1 1/2 hours). Add remaining ingredients and stir well. Place into fridge until Jello has set.

Feature Recipe

1/3 c flour
1/4 t basil
1/2 t thyme
1/2 t rosemary (ground)
1/8 t pepper
1/4 c butter (melted)
1/3 c milk
3 lb chicken (skinned & de-boned)
5 c corn flakes (crushed)

Pre-heat oven to 375 degrees. In mixing bowl, combine flour, basil, thyme, rosemary & pepper. Mix well. Add butter & milk. Mix well. Cut chicken into strips. Dip chicken into flour mixture. Coat well & roll in crushed cereal. Coat evenly. Place in baking dish lightly coated with oil. Bake for 55 minutes or until chicken is no longer pink & coating is golden brown.

Garden Salad

1/3 head lettuce
1/3 leaf lettuce
1/3 endive
2 lg. tomatoes (wedged)
1 cucumber (diced)
1/2 purple onion (sliced thin)
Italian dressing
*croutons

Base amounts of lettuce on serving four. Wash and pat dry all 3 types of lettuce. Tear into bite size pieces. In large mixing bowl, toss lettuce, tomatoe, cucumber and onion. Add dressing to taste. Garnish with croutons.
Enjoy!
* Note: Your favorite croutons or... Mine: cube 5/6 slices of bread, spread onto baking sheet. Pour 1/3 c. melted butter evenly over bread. Sprinkle garlic, oregano and pepper atop and bake on low 45 minutes or until crispy.

Pizza Crust
Choosing a crust for your pizza is very important. When making dough, I like to spice the crust according to flavor of pizza. For example, sprinkling garlic over crust for Italian and pepperoni pies is wonderful. Sprinkling crust with parmesan cheese is great too. Another tasty idea is to sprinkle corn meal on pan before laying crust down. For fruity pizza pies, use cookie dough for the crust. For breakfast pies use tubed crescent rolls. There are many recipes and many ways to get there. I frequently use frozen pizza/bread dough balls for time saving purposes. My second choice is pre-mixed boxes of pizza dough mix. For you 'from scratchers' here is a basic recipe and quite simple. Feel free to add spices to the dough while mixing for extra flavor. For example I like to add fennel & garlic to the dough for Italian pizza. Or cumin and cilantro for Mexican pizza pies. Have fun and be creative.
7/8 c warm water
3/4 t salt
2 tbl olive oil
2 1/2 c all-purpose flour
2 t white sugar
2 t active dry yeast
In mixing bowl, dissolve yeast with warm water. Let stand for 5 minutes. In separate mixing bowl, sift together dry ingredients. Add dry ingredients and oil to yeast mixture. Mix well until dough forms ball. If mixture is too dry add a teaspoon of water, if sticky add flour. Place ball on floured surface and knead for 1 minute. Cover with cloth and set in warm area. Let rise for 1 hour. Punch dough ball down and knead a few times. Cover and let rise again for 1 hour. On floured surface roll out dough. Press from center out. Place dough into lightly greased 12-inch round pizza pan. Poke holes evenly around crust to prevent bubbles when cooking. Let stand 10 minutes. Preheat oven to 400 degrees. Spread pizza sauce over dough. Sprinkle toppings over sauce. Bake 15-20 minutes, or until crust is golden brown.

Vegetable Pizza
1 12" pizza crust
1 small pakg cream cheese (softened)
1 pkg. Good Seasons dry mix
3/4 c brocoli (chopped)
3/4 c cauliflower (chopped)
3/4 c carrots (finely diced)
3/4 c onion
Bake pizza crust according to directions. Let cool. In mixing bowl, cream together cream cheese & seasoning package. Spread atop crust. Layer vegetables evenly over cream cheese. Lightly press thewm into the cheese mixture. Cut into wedges and serve chilled.

Cheese and Pepperoni Pizza
1 12" pizza crust
3/4 c pizza sauce
1 c mozarella cheese (shredded)
1 c sliced pepperoni
Preheat oven to 400 degrees. Place crust on lightly greased 12" pizza pan. Spread sauce evenly over crust, leaving 1/2" edge. Add extra sauce if desired. Sprinkle cheese atop. Lay pepperoni evenly atop cheese. Bake for 10-15 minutes or until crust is golden browned. Cool a bit before cutting.

Breakfast Pizza
1-8 ounce tube crescent rolls
6 eggs (beaten)
1 lb bacon or sausage(cooked, drained and crumbled)
1 1/2 c shredded cheddar cheese
1/2 c green pepper (finely chopped)
1/2 c green onion (finely chopped)
1/2 c tomatoe (finely chopped)
1-4 ounce can sliced mushrooms(optional)
Preheat oven to 375 degrees. Unroll dough and press into lightly greased 12" pizza pan forming crust. Scramble eggs and pour evenly over crust. Evenly layer remaining ingredients atop. Bake 15-20 minutes or until golden brown.

Italian Pizza
1 12" pizza crust
3/4 c sauce
1/2 t fennel seed
1 t garlic
1/2 t oregano
1 c mozarella cheese (grated)
1 lb. Italian sausage (browned, chopped & drained)
3/4 c green pepper (chopped)
3/4 c onion (chopped)
Preheat oven to 400 degrees. In skillet brown Italian sausage. Chop finely while cooking & drain. If making crust from scratch, add a dash of fennel seed, garlic & oregano. I like to blend spices in food processor first. Place pizza crust on lightly greased pizza pan. Sprinkle with dash garlic. Whether using sauce from scratch or premade, add fennel, garlic & oregano and simmer together for 15 minutes in saucepan. Evenly spread sauce over crust, leaving 1/2" at edge. Cover with cheese. Layer sausage, green pepper & onion. Bake for 10-15 minutes or until crust is golden browned.

Tomatoe & Basil Pizza
1 12" pizza dough
1/2 cup Parmesan cheese (shredded)
1/2 c mozarella cheese (shredded)
1 t garlic
1 t dried basil
1/2 t dried oregano
1 large tomatoe (sliced very thin)
Preheat oven to 400 degrees. Place pizza crust on 12" lightly greased pizza pan. Evenly sprinkle both cheeses over crust. Evenly sprinkle garlic, basil & oregano over cheese. Evenly lay tomatoes to cover pizza pie. Bake for 10-15 minutes or until crust is golden brown. br>Enjoy!

Maui Pizza
1 12" pizza crust
3/4 c pizza sauce
1 c mozarella cheese (shredded)
1 c ham (diced)
1 can sliced pineapple (drained)
Preheat oven to 400 degrees. Place crust on lightly greased 12" pizza pan. Drain Pineapple saving 1/4 cup juice. Add to the sauce and simmer 15 minutes. Evenly spread sauce over crust leaving 1/2" edge. Evenly sprinkle cheese atop. Layer ham even over cheese. Lay pineapple rings atop cheese. Bake 10-15 minutes or until crust is golden brown.

Vegetarian Pizza
1 unbaked pizza crust
1 1/2 c Ranch salad dressing
2 cups shredded Cheddar cheese
1/2 c carrots (shredded)
1/2 c cauliflower (chopped)
1/2 c fresh broccoli (chopped)
1/2 c onion (chopped)
1/2 c red bell pepper (chopped)
1/2 c sliced fresh mushrooms
1 lb mozzarella cheese (shredded)
Preheat oven to 350 degrees. Place pizza crust on a pizza pan. Spread dressing evenly atop. Sprinkle with Cheddar cheese. Evenly layer carrots, cauliflower, broccoli, onion, red pepper, and mushrooms. Top with mozzarella cheese. Bake 15 to 20 minutes, until vegetables are tender, and cheese is melted and lightly browned.

Mexican Pizza
1-8 oz pkg refrigerated crescent rolls
1-8 oz pkg cream cheese (softened)
1 clove garlic (pressed)
1/4 c cilantro
3 plum tomatoes (seeded & chopped)
1/4 c green bell pepper, seeded and chopped 2 tbl red onion, chopped 1 ripe avocado (peeled, seeded & thinly sliced)
Preheat oven to 350F. Unroll crescent roll dough and divide into triangles. On 12" pizza pan arrange with small ends in center. Roll dough into a 12" circle. Bake 12-15 minutes or until golden brown. Remove from oven and cool completely. In mixing bowl combine cream cheese, garlic, 2 tbl cilantro, garlic. Mix well. Spread cream cheese mixture evenly atop of crust. In mixing bowl combine tomatoes, green pepper, onion & remaining cilantro. Spread mixture over cream cheese. Gently cut to separate slices of pizza. Place avocado slice atop each piece of Mexican pizza. Serve.

Ultimate Pizza
1 12" pizza crust
1 c sauce
1 c mozarella cheese (grated)
TOPPINGS...
1/2 c bacon (cooked, drained & crumbled)
1/2 c pepperoni (sliced)
1/2 c onion (diced)
1/2 c green pepper (diced)
1/2 c jalapeno peppers (diced)
1/2 c black olives (sliced thin)
1/2 c anchovies
1/2 c mushrooms (sliced thin)
1/2 c pepper rings
Preheat oven to 400 degrees. Press dough into lightly greased pizza pan. Evenly spread sauce over crust leaving 1/2" at edge. Cover with cheese. Layer remaining ingredients atop pizza pie. Bake 10-15 minutes or until crust is golden brown. Slice into wedges. Serve hot.

Mini Pizzas
1 tube flaky bisquits
pizza sauce
mozzarella cheese (grated)
large pepperoni (thinly sliced)
Open can of bisquits and separate. Pull each flaky bisquit in half to make 2 mini crusts. Lay flat on lightly greased cookie sheet. Spread 1 tbl. pizza sauce on each crust. Pinch fair amount of cheese, sprinkle over sauce. Lay 1 large round pepperoni on top. Bake in 350 degree oven for 10 minutes or until crusts are lightly browned. These mini pizzas are fun for kids to make. However, they go quickly at adult parties too. Enjoy!

Chicken Caesar Pizza
1 pouch (16 ounces) Pizza Crust & Roll Mix (including yeast packet)
1 1/4 cups very warm water
1 tablespoon vegetable oil
Salad Toppings
2 ounces Parmesan cheese (grated)
1/2 c Caesar salad dressing
1 t Lemon Pepper
2 garlic clove (pressed)
1 pkg (8 ounce) cream cheese (softened)
3 boneless, skinless chicken breast halves (cooked)
4 c romaine lettuce (thinly sliced)
3/4 c red bell pepper (chopped)
1 can (3.5 ounces) pitted ripe olives (sliced)
Preheat oven to 425 degrees. For pizza crust, combine mix, water and oil. Mix dough according to package directions. Roll out dough to edge of large round pizza pan. Bake 18-20 minutes or until crust is golden brown. Remove to cooling rack. Grate Parmesan cheese. In small bowl, combine 1/4 cup of the cheese, dressing, lemon pepper and garlic. Mix well. In mixing bowl, combine cream cheese and half of the dressing mixture. Mix well. Chop half of the chicken & add to cream cheese mixture. Mix well. Slice remaining chicken into thin strips; set aside. Slice lettuce, chop bell pepper & olives. Place lettuce, bell pepper and olives in large bowl. Add remaining dressing mixture. Toss to coat. Spread cream cheese mixture over crust. Top with salad mixture. Arrange chicken strips over salad. Sprinkle with remaining Parmesan cheese. Cut with a pizza cutter into wedges. Serve.

BLT Pizza
1 12" pizza crust
1 c mozarella cheese (grated)
1 lb bacon (browned, drained & crumbled)
1 c lettuce (grated)
3/4 c tomatoes (thinly sliced)
3/4 c Ranch salad dressing
Preheat oven to 400 degrees. Place crust onto lightly greased 12" pizza pan. Evenly spread cheese over crust. Bake for 10-12 minutes or until crust is lightly browned. Evenly layer bacon, lettuce & tomatoes atop cheese. Drizzle ranch dressing over entire pizza. Slice into wedges.

Stuffed Spinach Pizza
1 loaf (16 Oz.) frozen bread dough
1 pkg (10 oz.) frozen chopped spinach (thawed and drained)
1 c mushrooms (coarsely chopped)
3/4 c onions (chopped)
salt & pepper to taste
2 c mozzarella cheese (shredded)
3/4 c pizza sauce
3 tbl parmesan cheese (grated)
Let bread dough thaw and rise until doubled in size, 3-4 hours at room temp. Preheat oven to 400 degrees. Divide risen dough in half. Evenly press 1/2 of dough into bottom and up sides of lightly greased deep dish pizza pan. In bowl, toss spinach, mushrooms, and onions. Season with salt and pepper. Layer half of mozzarella cheese on top of dough. Top with spinach mixture. Layer with remaining mozzarella cheese. Roll out remaining half of dough to a 9-inch circle. Place atop of pizza. Pinch together top and bottom crusts. Bake 35 minutes. Spread pizza sauce over top; sprinkle with parmesan cheese. Bake an additional 10 minutes. Cool 10 minutes. Cut into wedges with pizza cutter

Fruit Pizza
1 tube pre-made sugar cookie dough
SPREAD... 8 pkg (8 ounce) Cream Cheese
1/4 t Nutmeg
3/4 c brown sugar
1/4 c white sugar
1/2 t vanilla
1/2 t cinnamon
TOPPINGS... 3/4 c fresh strawberries (thinly sliced)
3/4 c fresh blue berries
3/4 c fresh green grapes (sliced)
3/4 c fresh bananas (peeled & sliced)
3/4 c mandarian oranges (drained)
Preheat oven to 400 degrees. Slice cookie dough into 1/4" slices. Lay slices next to each in circular pattern. Gently roll out dough to fit round 12" pizza pan. Bake 8-10 minutes or until very lightly browned. In mixing bowl cream together 'spread' ingredients. Mix well. Spread mixture evenly over entire cookie crust. Lay fruit in creative circular design atop cookie crust. Slice & serve chilled.

Apple Pizza
1/2 c butter (softened)
1/4 c confectioners' sugar
1 c sifted all-purpose flour
2 (21 ounce) cans apple pie filling
1 c shredded Cheddar cheese
3/4 c all-purpose flour
1/2 c packed brown sugar
1 t cinnamon
Preheat oven to 350 degrees. In mixing bowl, cream together butter and confectioners' sugar. Add 1 cup flour and mix gently just until dough comes together. Press evenly into a 12 inch pizza pan. Bake for 15 minutes. Remove and spread apple pie filling atop. In a medium bowl, mix together cheese, 3/4 cup flour, brown sugar, and cinnamon. Sprinkle over apple filling and return pizza to oven for 25-30 minutes.

Pizza Sauce
1 small jar favorite spaghetti sauce
2 t sugar
2 t garlic
1 tbl parsley
3 tbl parmesan cheese (finely grated)
In all honesty, I use pre-made sauces. They are quick and simple. For most recipes the above ingredients may be added to the sauce and simmered for 1/2 hour on low heat in sauce pan. If you like it chunky, add 3/4 c stewed tomatoes (drained).
